Sausage With Polenta And Spinach

Ingredients:


4 links italian sausages -- 3/4 inch slices

4 cups water

3/4 teaspoon salt

1/2 teaspoon dried basil

3 cloves garlic peeled and minced

1 cup quick-cooking polenta

1 tablespoons olive oil

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon salt

1 package fresh washed spinach leaves -- stems removed

2 tablespoons parmesan cheese -- grated
 

Preparation / Directions:


Heat a large nonstick skillet over medium heat. When the pan is hot, add sausage, stirring frequently until cooked through and no longer pink, about 10 minutes. Meanwhile, in a medium saucepan bring water, salt, basil and 2 minced cloves garlic to a boil. Whisk in the polenta, cover and cook over meidum-low heat 10 minutes, stirring often. The mixture will splatter, so use kitchen mitts. Remove sausage from pan. Add olive oil. Add remaining clove garlic, pepper flakes and salt; stir 30 seconds. Add spinach and cook quickly over medium- high heat just until wilted, about 4 minutes. Spoon the polenta onto plates and top with spinach and then the sausage. Sprinkle each serving lightly with cheese and serve.
