Italian Meatloaf

Ingredients:


1 pound ground beef -- lean

3 Slices bread -- diet (made into crumbs)

1 Can tomato sauce -- divided (8 oz can)

1 large egg

1 teaspoon oregano -- divided

2 teaspoon garlic minced

2 teaspoon minced onion -- dry

1 teaspoon onion salt

1 teaspoon garlic salt

1 teaspoon salt

1 teaspoon pepper

4 ounces mozzarella -- shredded

4 tablespoons Parmesan cheese -- grated

1 tablespoons Parmesan cheese -- grated, for garnish
 

Preparation / Directions:


1. Add oregano, minced garlic, minced onion, onion salt, garlic salt, salt and pepper, and any other italian seasons you prefer to the contents of the entire can of tomato sauce.

2. Mix together ground beef, bread crumbs, half the seasoned tomato sauce, and egg,

3. On a large oblong piece of wax paper, spread the meat mixture into a rectangle shape, 1/2 inch thick. Sprinkle this entire rectangle shape of meat with mozzarella and 4 Tbsp of the parmesan cheese.

4. Roll up the rectangle of meat (as if to make a pinwheel loaf) by starting on the short side. Lift paper until meat begins to roll tightly. Peel back the wax paper to keep it free. Continue lifting and peeling to complete roll. Seal edges and place the rolled meatloaf in a loaf dish.

5. Microwave at High for 9 minutes, rotating dish after half the cooking time.

6. Reduce power to 50% (Medium). Microwave 11 to 14 minutes or until meat loses most of its pink color, rotating dish after half the cooking time. Do not overcook! Drain.

7. Pour the last half of the seasoned tomato sauce over the meatloaf. Sprinkle with 1 Tbsp of Parmesan cheese. Microwave 2 minutes to heat sauce.

NOTES: Preparation time: 30 minutes.
