2 cups lentils
1 cup brown rice

Preparation / Directions:

1 cup onions -- chopped 2 cloves garlic -- minced 1 teaspoon oil 1 teaspoon cumin 1 teaspoon coriander 1/4 teaspoon black pepper 1 tablespoon soy sauce 1 lemon -- juice of In a tightly coverered 3-quart pan, bring the lentils, brown rice, and water to a boil, lower the heat and simmer for 40 minutes. Saute the onions and garlic in the oil for several minutes until the onions are soft and transparent. Add the cumin, coriander, black pepper, soy sauce, onions, and garlic to the cooked lentils and rice. Cook for 10 minute, remove from the heat and let sit for several minutes. Drizzle the lemon juice over each portion before serving.
