Lambs Liver With Bacon And Onions

Ingredients:


2 large onions -- sliced

2 tablespoons butter -- for frying

1 pound lambs liver -- ask you local butcher to slice horizontally as thinly as possible

2 tablespoons seasoned flour

6 slices streaky bacon

1 bunch chopped parsley
 

Preparation / Directions:


Fry the Onions gently in Butter until opaque but not brown. Meanwhile grill the Streaky Bacon until crisp. Lift out the onions and put into a heated oven-to-table casserole (keep warm). Dip the Liver in a little Flour seasoned with Salt and Pepper. In the pan in which the onions were cooked, gently cook the liver on each side; do not overcook. Put the liver on top of the onions in the casserole along with the buttery pan juices, place the crispy bacon on top, scatter with freshly chopped parsley and serve. Boiled or creamed potatoes are good with this.
