Spinach Souffle Salad

Ingredients:


2 Tablespoon minced onion

2 cups finely chopped spinach

2/3 cup chopped celery

2 Packages lime jello

2 cups boiling water

1 cup cold water

3 Tablespoon white vinegar

1 dash salt and pepper

1 cup mayonnaise

1 1/2 cups cottage cheese
 

Preparation / Directions:


Prepare vegetables. Dissolve jello in hot water. Add cold water, vinegar, salt and pepper. Let partially set in refrigerator, then, using an egg beater, beat til fluffy. Add remaining ingredients and place in 2 qt. mold or 9 x 13" pan.
