Tomato Basil Pasta Pomadoro Style

Ingredients:

12 ounces fettuccine -- or penne rigate -- tomato basil flavored
1/4 cup extra virgin olive oil
2 1/2 cups tomatoes -- diced
1/4 cup fresh basil -- chopped
1 teaspoon garlic -- minced
3/4 cup chicken broth
1/4 cup parmesan cheese -- grated
1 teaspoon salt and pepper to taste
 

Preparation / Directions:

Cook pasta according to package directions. Meanwhile, heat olive oil in large skillet. Add tomatoes, basil and garlic. Season with salt and pepper and sauté‚for four minutes. Add chicken broth to pot and simmer for two minutes. Mix hot pasta with sauce in skillet and mix well. Sprinkle with Parmesan cheese and serve.
