Nell Carter's Knockout Chicken

Ingredients:


1 whole chicken -- cut up

1 pound mushrooms

4 medium tomatoes

1 medium red onion

1 medium yellow onion

3 tablespoons vegetable oil

6 medium scallions

1 Cup parmesan cheese

1 tablespoon margarine

2 cloves garlic

1 teaspoon salt and pepper
 

Preparation / Directions:


Chop the mushrooms, tomatoes, scallions, garlic and onions, and sauté‚in margarine. Season the vegetables only from the top. While they are sauteing, heat the oil in a shallow pan and cook the chicken, uncovered, for about 25 minutes. Pour the saut‚ed mixture over the cooked chicken, cover and continue to cook for 20 minutes. Sprinkle with Parmesan cheese (a lot if you like) and cook 10 minutes more.
