Scott Baio's Ricotta Puffs

Ingredients:


1 cup flour

2 tablespoons sugar

2 large eggs

2 1/2 cups vegetable oil

1 teaspoon baking powder

1 tablespoon vanilla

1 pound low-fat ricotta cheese

1/2 Cup powdered sugar
 

Preparation / Directions:


Using a cooking thermometer, heat vegetable oil in a deep saucepan to 375F. Mix all other ingredients together except for powdered sugar. carefully, add a tb of mixture at a time to hot oil. Within a minute, balls will form puffs and turn a golden brown. Drain on a paper towel and sprinkle with powdered sugar. Serve warm.
