2 pounds carrots -- grate or near-puree
4 ounces sugar -- (1/2 cup)
5 tablespoons water -- (scant 1/3 cup)
1/8 teaspoon nutmeg
1/4 teaspoon ground saffron
2 ounces butter -- (1/2 cube), melted
1 pound blanched almonds*

Preparation / Directions:

*freshly ground or very finely chopped Make a syrup with sugar and water. Boil to 217 deg. F, thread stage. Add the carrots, nutmeg, and saffron. Cook until moisture and syrup dries up.
