Gajar Halwa (Carrot Dessert)

Ingredients:


1 can water

1 can sweetened condensed milk -- (14 oz)

2 cups grated carrots

1 cup butter or margarine

2 tablespoons chopped blanched almonds

2 tablespoons raisins

1/4 teaspoon ground saffron

1 tablespoon fresh lime juice -- heated
 

Preparation / Directions:


One of India's most delicious and nutritious desserts. Add 1 can of water to the condensed milk and bring to a boil. Add carrots and cook over low heat for about 45 minutes, stirring occasionally. Add butter gradually and cook until fat begins to separate. Add the almonds and raisins and saffron that has been dissolved in the lime juice. This dessert may be served hot or cold
