Yelimichai Sadham (Lemon Rice)

Ingredients:


250 gram rice

50 milliliters oil

1/2 teaspoon mustard seeds

1 teaspoon urad dal

1 teaspoon chana dal

4 medium red chiles -- cut into pieces

2 sprigs curry leaves

2 1/2 pieces ginger -- julienne

2 medium green chiles

1/2 teaspoon turmeric powder

1/4 teaspoon asafetida

1 teaspoon salt to taste

2 medium lemons -- juice of

100 gram cashew nuts -- fried

50 grams coriander leaves -- chopped
 

Preparation / Directions:


BOIL rice until three-fourths done and cool. Heat oil and season with mustard seeds, urad dal, chana dal, red chile pieces and curry leaves. Add chopped ginger and stir lightly. Add green chiles and toss. Add turmeric powder, asafetida and salt. Toss the cooked rice in this mixture, sprinkle lemon juice and cook for a few minutes more. Serve hot, garnished with fried cashew nuts and chopped coriander leaves.
