Art Malek's Quick Chicken Curry

Ingredients:


4 medium boneless skinless chicken breasts

1 piece cardamon pods

1 clove garlic

1 piece fresh ginger root

1 medium chili pepper

1 Cup yogurt

1 can indian fried onions

2 bunches coriander leaves

1 piece chapatis
 

Preparation / Directions:


Oil in skillet. Add 2 large and 4 small (green) cardamon pods. Add chicken chunks and saute. Add garlic and ginger paste (crushed in mortar and pestle). Add chili pepper (fresh or powder) to taste. Add yogurt and Indian fried onions to make a sauce. Sprinkle coriander leaves on top before serving. Serve with chapatis. NOTE: This is a very free form recipe, amounts depend on how many you are cooking for. The recipe was written down while watching Art make it on a BBC TV cooking program - he made only enough for 1 person. The Indian fried onions can be bought in specialty food stores - it's not the kind that come in a can
