Spinach Tura

Ingredients:


3 cups tightly packed finely sliced spinach -- (i use frozen, thawed)

1 cup freshly grated coconut

2 cloves garlic -- chopped, up to 3

2 small shallots -- chopped (i use ordinary onions), up to 3

2 medium green chiles -- chopped (ive used various kinds of hot stuff)

1/2 piece fresh ginger -- grated

1/2 teaspoon salt

1/4 teaspoon cayenne

1 teaspoon turmeric
 

Preparation / Directions:


Steam or thaw spinach and saute lightly. Blend remaining ingredients to a fine paste adding a little water and add this paste to the spinach. Heat through and serve. To round out into a main dish I plunk a poached egg on top.
