Homemade Chocolate Chocolate-Chip Ice Cream

Ingredients:


3 cups half and half or

4 cups light cream

4 1/2 cups heavy cream or

4 cups heavy cream

4 1/2 cups milk or

4 cups milk

2 1/2 cups sugar

3/8 teaspoon salt

1 piece vanilla bean** or

3 tablespoons vanilla extract

3/4 cup unsweetened cocoa

3 tablespoons unsalted butter

1 1/2 teaspoons almond extract -- (1 1/2 to 2)

6 ounces semi-sweet mini-chips
 

Preparation / Directions:


**if using vanilla bean, split pod and scrape out inside. Cut up pod and use entire bean. Over medium heat, combine Half and Half (or light cream), milk, sugar and salt. As mixture starts heating, add in vanilla, cocoa, butter, and almond extract. Heat until almost ready to boil. Remove from heat and chill. When ready to freeze, stir mixture, strain, and add heavy cream. Freeze in crank style freezer. When half frozen, add mini-chips
