Court's Sweet, Thrice Baked Ham Delight!

Flakey red, slow cooked ham, made with pinapple and brown sugar.
 

Ingredients:


12 pound ham (the cheaper the better)

2 cups brown sugar

2 cans crushed pineapple
 

Preparation / Directions:


This is an incredibly simple but good recipe. You slice up a cheap grocery store ham into half inch, half moon slices. Stack them overlapped in an oven pan, or the bottom of a slow cooker. Cover them with the brown sugar, and spread the crushed pineapple evenly over the top. Slow cook on high for 4-6 hours, or until the ham turns from pink to medium red. It will easily flake with a fork at this time. If you choose to use an oven, set it at about 325 degrees. Make sure the oven pan is well sealed with aluminum foil, and check every hour. You'll need to baste, and may have to add water. If this drys out it will burn quickly in the oven. The slow cooker method is best to prevent this from happening. It can be stored for 2-3 days in the fridge after cooking, save the remaining liquid in the pan to keep it moist. A quick microwave will heat it up, or its great just eating it cold.

 

Nutritional Information:

You'll get some carbs from the sugar and pineapple, but this is great for an Atkins diet, as it is predominantly lean tasty protein.
