Basil Marinated Catfish With Pickled Peaches

4 fillets center-cut catfish steaks - -- (2 inch thk)
4 whole pickled peaches -- see * note
1 recipe basil marinade -- see * note
1/2 gallon pickling liquid from peaches -- for drizzling

Preparation / Directions:

* Note: See the "Pickled Peaches" and "Basil Marinade" recipes which are included in this collection. Rub catfish with Basil Marinade and let stand for 1 hour in the refrigerator. While the catfish is still very cold, grill for 5 minutes on each side. Slice the Pickled Peaches and place on top of catfish and drizzle some of their pickling juice over the top.
