West Coast Broiled Flank Steak

Ingredients:


1 1/2 pounds flank steak

1 medium Onion -- thinly sliced

1 teaspoon fresh grated lemon peel

1/2 cup freshly squeezed lemon juice

2 tablespoons sugar

1/2 teaspoon salt

1/2 teaspoon oregano -- crushed

1/8 teaspoon freshly ground black pepper

2 tablespoons soy sauce

1 tablespoon butter
 

Preparation / Directions:


Trim any fat or membrane from the steak. With knife, score steak 1/8 inch deep on both sides in diamond pattern. Layer 1/2 onions in plastic bag or glass dish. Place steak on top of onions, cover with remaining onion. Thoroughly combine remaining ingredients, except butter and pour over steak, top with remaining onion. Marinate 2 - 3 hours or overnight in refrigerator or overnight, turning several times. Remove steak from marinade, wipe partially dry with paper towel. Drain onions and reserve. Broiler: Place steak on cold broiler pan 3 - 5 inches from heat source. Broil 3 -5 minutes per side. Grill: Prepare charcoal grill and grill over medium coals 3-5 minutes per side or until internal temperature is 135F for rare, 145F for medium. Meanwhile sauté onions in butter until soft.
