Grilled Water Buffalo Steak With Warrigal Greens

Ingredients:


200 gram water buffalo eye fillet

25 grams warrigal greens

25 grams wild mushrooms

150 milliliter good quality jus

30 milliliters cream seasoning
 

Preparation / Directions:


If your wild mushrooms are in a dry state, put in simmering water for a few minutes Leave to cool in the water. To make the sauce, sauté‚ your sliced wild mushrooms, then add the jus. While that is simmering, slice the warrigal greens and add to the sauce. Let the sauce simmer for a while to allow the flavor in the mushrooms and greens to mix with those of the jus. While the sauce is being made, the buffalo steak should be on the char-grill being cooked to the desired degree. When cooked, add to the sauce which can now be finished with cream and seasoning. Serve with seasonal fresh vegetables. Cooking must be done with great care and love, sometimes it demands time. Bon appetit, Magnus Johansson.
