Grilled Marinated Chicken with Grilled Pepper and Olive Relish

Ingredients:


2 teaspoons ancho powder

1 tablespoon honey

2 tablespoons lime juice

1 tablespoon sherry vinegar

1/2 cup coarsely chopped fresh oregano leaves

1/2 cup garlic coarsely chopped

1/4 cup olive oil

---garlic and fresh oregano marinade---

1 cup grilled pepper and black olive relish -- see * note

2 whole chickens -- quartered
 

Preparation / Directions:


* Note: See the "Grilled Pepper And Black Olive Relish" recipe which is included in this collection. Combine all of the marinade ingredients in a mixing bowl. Mix until thoroughly combined. Marinate the chicken for 1 hour. Prepare a wood or charcoal grill and let it burn down to embers. Grill chicken for 4 minutes on each side or until done.
