Grilled Chicken Dijon Vinaigrette Salad

3/4 cup vegetable oil
1/4 cup red wine vinegar
2 tablespoons Grey Poupon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
6 cups mixed lettuce greens
1 cup snow peas -- blanched
1 small red pepper -- cut in strips
1 cup sliced mushrooms
6 medium chicken breasts -- boneless, skinless

Preparation / Directions:

In small bowl, whisk oil, vinegar, mustard, salt and pepper; set aside. Arrange lettuce, snow peas, red pepper and mushrooms on 6 individual salad plates; set aside. Grill chicken 6" from heat source for 10 to 15 minutes or until done, turning once. Diagonally slice chicken breasts and arrange on each salad. Serve with vinaigrette.
