Cauliflower Kapamas

Ingredients:


6 pounds Cauliflower

2 medium Lemons, juice only

1 1/4 Cup oil

1 medium onion, chopped

1 Tablespoon tomato paste

1 teaspoon salt and pepper to taste

2 cups water

1 Teaspoon allspice
 

Preparation / Directions:


Wash the cauliflower well and break into flowerets; drain. Place on a platter and pour lemon juice over all. Heat the oil in a fying pan and fry the pieces, than carefully transfer to a large pot. Fry onion lightly in same frying pan. Add the tomato paste and 1 cup of water, stir, bring to a boil. Cook for 3 minutes, than pour the sauce into the pot with the cauliflower. Place over medium heat, bring to a boil. Add the 2nd cup of water. Continue to cook until all the liquid has been absorbed and only the oil remains (30-45 minutes.
