Tomato Gravy

2 tablespoons butter
2 tablespoons shallot -- minced
14 1/2 ounces tomatoes -- canned diced
1/2 cup whipping cream
1/2 teaspoon sugar
1/4 teaspoon pepper

Preparation / Directions:

Melt butter in a large skilled over medium heat; add shallots, and saute until tender. Stir in tomatoes, bring to boil. Reduce heat; simmer, stirring constantly 2 to 3 minutes. Stir in whipping cream and remaining ingredients, simmer stirring often, 3 minutes or until thickened. Serve with pasta, potatoes, or veal. Notes: Prep. 5 minutes Cook 5 minutes
