Ingredients:


1 medium Green Pepper -- seeded

1 medium Tomato -- (trim off green stuf

1 medium Onion

3 Cloves Garlic -- or more to taste

2 tablespoons Olive Oil

1/4 Cup Vinegar

2 Ounces Sherry -- approximately

1 teaspoon salt and Pepper

2 Dashes Hot Sauce -- or more

1 Cup Tomato Juice -- or more

-----For Garnish-----

1 medium Cucumber -- peeled and seeded
 

Preparation / Directions:


Puree first 5 ingredients in a blender or food processor then transfer to a bowl. Add remaining ingredients. Stir it together and taste it. I like it sour and spicy and, since I just throw it together, the measurements are estimated. Then chop up extra cucumbers, peppers and onions and serve on the side as garnish.
