Preparation / Directions:
Stir above ingredients until smooth. Place over medium low heat and stir constantly for 10 minutes. Turn heat to low and cook 10 more minutes, stirring frequently, until mixture forms a soft ball when dropped in cold water. Remove from heat and add 2 tablespoons butter. Beat with an electric mixer approximately 10 minutes, starting on low and gradually increasing to high speed. Pour at once into buttered 8" square pan and cut into squares. Makes 2 dozen squares.
Makes delicious butterscotch, chocolate, coconut, and vanilla fudge, depending on the flavor of pie mix used.
FOR EXTRA RICH FUDGE: Add 1/2 cup chopped nuts. Also butterscotch chips, shredded coconut and flavoring may be added as desired.
