Beer Batter For Fruit and Vanilla Sauce

Ingredients:


2 cups flour

1 dash salt

1 dash sugar

1 bottle beer

5 large egg whites

1 small amount vegetable oil

1 teaspoon cinnamon

1/2 Cup sugar

1 recipe vanilla sauce

1 bunch fresh fruit

---VANILLA SAUCE---

2 pints half-and-half

1/2 piece vanilla bean

1/2 Cup sugar -- to taste

5 large egg yolks
 

Preparation / Directions:


This beer batter can be used for any kind of fresh fruit, strawberries, raspberries, etc. Combine the dry ingredients into a mixing bowl. Using a wire whip, add the beer slowly until it is a creamy consistency. Beat egg whites until they form stiff peaks and then fold them into the batter. If the batter is going to be sitting for awhile before using it, sprinkle the top with a very small amount of vegetable oil to keep a skin from forming on the top. More beer can be added if needed. Dry each piece of fruit completely on absorbent cotton cloth to make sure it is without moisture. Dip each piece of fruit in the beer batter and deep fry until golden brown. Take the fruit out of the hot oil and drain on absorbent toweling. Roll the fruit in cinnamon sugar until evenly coated. Serve on a bed of Vanilla Sauce. Vanilla Sauce: Bring half-and-half, vanilla bean, and sugar to boil in a double boiler. Place 5 egg yolks in a mixing bowl and beat thoroughly with a wire whip. Add boiling cream mixture to the egg yolks stirring constantly. The best way to do this is by placing the mixing bowl in a hot water bath.
