CHILLED PEAR-MINT SOUP

Ingredients:


4 medium Ripe medium pears

1/4 cup Firmly packed mint leaves

1 cup Half-and-half

1 tablespoon Sugar

2 tablespoons Lime juice
 

Preparation / Directions:


To cut down on chilling time, start with thoroughly chilled pears. Pare and core pears. Cut into large pieces. Place pear pieces and remaining ingredients in blender or food processor. Cover and blend on high speed, or process, 3 minutes or until smooth. Refrigerate 5 hours or until chilled. Stir before serving. Garnish with mint leaves if desired. Refrigerate any remaining soup.
