Betty Bell's Apple Crisp

4 cups tart apples -- pared and sliced or diced
1 tablespoon lemon juice -- fresh or bottled
1 teaspoon all-purpose baking spice or
1 teaspoon ground cinnamon

Preparation / Directions:

Combine apples, lemon juice, and spice with 3 tablespoons water and place in a greased 8x8 inch or 10 x 6 inch pan. Measure approximately 2 1/2 cups of Crisp Mix and sprinkle over top. Bake in preheated 350 oven for 40 minutes or until top is very lightly browned. Serve at room temperature. Top with frozen yogurt or ice cream, if desired. VARIATIONS: Instead of apples, substitute fresh or canned peaches (use 3 tablespoons canned juice instead of water), apricots, or nectarines. If using blackberries, raspberries, blueberries, or plums, omit the water and mix fruit with 2 tablespoons quick-cooking tapioca.
