Banana Clafouti

Ingredients:


5 tablespoons sugar

3 large bananas -- firm, but ripe

2 cups half and half

3 large eggs -- beaten

1/4 cup all-purpose flour

1 tablespoon orange rind -- finely grated

1 teaspoon vanilla extract

1/4 teaspoon salt

1 Cup confectioners sugar
 

Preparation / Directions:


Preheat oven to 375F degrees. Butter an 8 x 8-inch or 7 x 10-inch shallow baking dish. Sprinkle 2 tablespoons of the sugar int he bottom. Cut each banana into 3 long strips and line the bottom of the dish with them. In a bowl, beat together all the remaining ingredients, except the confectioner's sugar, and pour carefully over the bananas. Bake for 40 to 50 minutes, or until puffed and golden. Let cool on a rack for 15 minutes. Sift confectioner's sugar over the top for garnish. Lee Bailey's Note: Clafouti is traditionally made with fresh black cherries, but I thought it might be fun to give this old-timer a new
