Ingredients:

4 medium ripe but firm bartlett pears -- peeled, halved, cored

1/2 cup brown sugar

1 teaspoon ground ginger

3 tablespoons honey

2 tablespoons fresh lemon juice

4 tablespoons butter

1 bunch fresh mint -- (optional)

Preparation / Directions:

Preheat oven to 375 degrees. Butter large ovenproof skillet. Arrange pears cut side down in skillet. Sprinkle with sugar and ginger. Mix honey and lemon juice in small bowl. Drizzle over pears. Dot with butter. Bake until juices bubble thickly and pears are tender when pierced with knife, basting occasionally with pan juices, about 15 minutes. Turn pears over. Bake 5 minutes. Remove from oven. Serve warm, or refrigerate and serve chilled. Prep Time: 10 minutes Cook Time: 20 minutes Makes: 4 servings Baking pears in brown sugar with honey and spices is very simple to do. They come out juicy and tender and coated in a golden syrup that tastes terrific. Look for pears that are ripe but still firm. Serve with ice cream or frozen yogurt, if you like.
