Ambrosia Fruit Basket

1 medium fresh pineapple
1/2 cup shredded coconut
1/2 cup canned mandarin oranges -- drained
3 tablespoons sour cream

Preparation / Directions:

1. Cut a quarter section from pineapple, leaving about 1-inch band for basket handle. Cut another quarter from opposite side of handle. 2. Remove fruit from basket portion; core and dice the fruit and combine with mandarin oranges, coconut and sour cream. 3. Return to basket. Serve as a salad or dessert.
