Almond-Stuffed Apples

1/2 cup blanched almonds
2 tablespoons melted butter
1/4 cup sugar
1/2 Cup fine bread crumbs
1/4 teaspoon almond extract
8 medium baking apples -- peeled and cored
2 tablespoons water

Preparation / Directions:

Blend almonds in electric blender until finely ground. Add water, sugar and almond extract; blend until smooth. Fill apples with almond paste. Roll apples in melted butter, then in bread crumbs and last in sugar. Arrange fruit in buttered baking pan or dish. Bake at 425 degrees for 20 minutes or until tender. Serve with whipped cream.
