2 large egg whites
1/4 teaspoon cream of tartar -- optional
1 cup sugar
1 tablespoons light karo syrup
1 tablespoons water
1 dash salt
1 tablespoons vanilla extract

Preparation / Directions:

In a medium saucepan, mix the first four ingredients. Add water and salt, mix well. Cook over low heat, whipping regularly with a wire whisk. Remone from heat when the frosting forms soft peaks. { When you pull out the whisk, the mountains will rise and the peaks will fall.} Stir in the vanilla. Spread on cake before frosting cools. Variations: This is a fairly flexible recipe. In place of the vanilla try using an equal amount of instant coffee granules, grated fresh lemon, orange or lime zest, or 3 drops peppermint oil. Caramel frosting can be made by substituting 2/3 cup brown sugar for the white sugar.
