1 cup low-fat cottage cheese
5 tablespoons flour
1 teaspoon cinnamon
2 large egg yolks
1 medium apple
1 large egg white
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1/2 cup sour cream

Preparation / Directions:

Heat oven to 200. Pour vegetable oil 1/4" deep in skillet. Heat to medium-high heat. Meanwhile, mix together cottage cheese, flour, cinnamon, yolks and apple. In another bowl, beat egg white until stiff, shiny peaks form. Gently fold egg white into cheese mixture. Drop rounded tablespoonsful of cheese mixture into hot oil. Cook 1 minute on each side until golden. Drain fritters on paper towels. Keep warm in oven while you cook the rest. Serve with applesauce and sour cream. Approximately 8-10 minutes.
