Ingredients:


1 tablespoon olive oil

1 1/2 pounds fish steaks -- (4 to 6 steaks), *

4 medium tomatoes -- peeled and quartered

1 dash fennel seed

1 dash thyme

1 small bay leaf

1/2 clove garlic -- crushed

4 piece peppercorns

1/2 teaspoon salt

1/4 teaspoon saffron

1 cup dry white wine

1 medium lemon
 

Preparation / Directions:


* Note: Good with firm-meat fish: Swordfish, tuna fish, salmon, etc. Oil a large skillet. Place fish in skillet. Add tomatoes, fennel, thyme, bay leaf, garlic, peppercorns, salt, and saffron. Add wine. Bring to boil. Cover and simmer for 10 minutes, or until fish is well cooked but still firm. Cool fish in cooking liquid. Serve fish cold with 4 to 6 tablespoons of cooking liquid.
