2 tablespoons lard
2 tablespoons chopped scallion
1 medium green pepper -- coarsely chopped
1 cup long-grain rice
1 teaspoon salt
1 dash saffron
1 cup consomme
2 cups boiling water

Preparation / Directions:

In large heavy saucepan, heat lard. Add scallion and pepper. Cook until browned. Add rice and cook, stirring constantly, until rice is well coated with fat. Add salt, saffron, consommé, and water.
