Potatoes Lyonnaise

2 pounds potatoes -- boiled and peeled
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
2 large onions -- thinly sliced
1 tablespoon parsley -- finely chopped

Preparation / Directions:

Cut potatoes into slices 1/4-inch thick. In heavy skillet, heat 2 tablespoons butter. Add potatoes, salt, and pepper, and cook over medium flame for 20 minutes, shaking potatoes in pan approximately every 5 minutes. Meanwhile, heat remaining butter in small skillet. Add onions and cook until slightly browned. Add onions to potatoes. Mix well and continue cooking for 10 minutes, shaking potato mixture in pan occasionally. Sprinkle with parsley. Serve hot.
