Potatoes "Persillees"

Ingredients:


8 medium potatoes -- peeled, cut in half

1/2 cup water

1/2 cup consomme

1 teaspoon salt

1/4 teaspoon pepper

3 tablespoons chopped parsley

2 tablespoons butter -- cut in small pieces
 

Preparation / Directions:


In buttered baking dish, combine potatoes, water, consommé, salt, pepper, 2 tablespoons parsley, and butter. Cover with aluminum foil. Bake at 400F for 1 hour, or until potatoes are tender and liquid is reduced to approximately half of the original volume. Sprinkle with remaining parsley. Serve hot.
