Omelet With Chicken Livers

1 large egg mixture -- (as in basic French omelet), * see note
1 tablespoon butter
1/2 cup chicken livers -- sliced
2 tablespoons clear chicken broth
1 tablespoon Beurre Manie -- * see note

Preparation / Directions:

* Note: The recipes for "Basic French Omelet" and "Beurre Manie" are included in this database. In small skillet, heat butter. Add chicken livers and cook over brisk flame for 5 minutes, or until livers are browned. Add chicken broth. Bring to boil. Add "Beurre Manie" and continue cooking for 2 minutes, or until sauce thickens. Meanwhile, make omelet as in "Basic French Omelet." Before folding it, place liver mixture in center.
