Ingredients:


6 large leeks

4 tablespoons basic dressing -- * see note

1 tablespoon chopped parsley
 

Preparation / Directions:


* Note: The recipe for "Basic Dressing - (Vinaigrette)" is included in this database. Cut leeks in four, lengthwise. Wash thoroughly until no sand remains between leaves. Cook in salted boiling water for 30 minutes, or until leeks are very tender. Place leeks in salad bowl. Pour vinaigrette over leeks. Sprinkle with parsley. Serve warm or cold. Comments: "Leek salad" is called in France "the poor man's asparagus" -- but there are many who prefer it to the "rich man's" variety. It is fresh and delicious.
