2 fillets sole fillets 5 oz.
5 medium mushrooms chopped
2 tablespoons chopped parsley
2 tablespoons chopped shallots
2 tablespoons peeled and chopped tomatoes
1/2 cup soave or dry white wine
1 teaspoon salt and pepper

Preparation / Directions:

Cover bottom of baking dish with half the tomatoes. Sprinkle with half the mushrooms, parsley and shallots. Lay the fish on top and cover with the rest of the tomatoes, mushrooms, shallots and parsley. Pour the soave over the mixture. Sprinkle with salt and pepper and bake at 350f for 30 minutes.
