Halibut With Fennel

3 tablespoons unsalted butter
2 small shallots -- minced
2 pounds halibut steak -- 1 inch thick
1 medium fresh fennel bulb -- cut thin julienne
2 medium lemons -- juice of
1/4 teaspoon coarse kosher salt -- to taste
1/4 teaspoon freshly-ground black pepper -- to taste

Preparation / Directions:

Preheat the oven to 375F Butter a shallow baking dish. Sprinkle the shallots over the bottom and put the halibut steak on top. Arrange the fennel julienne over the fish, dot with the remaining butter, and sprinkle with the lemon juice and salt and pepper. Bake for 10 minutes, remove from the oven, and baste fish with the cooking juices. Return to the oven and cook 10 minutes more, or until fish is done (the flesh should be white at the bone).
