Fish Fume

Ingredients:


2 pounds fish trimmings -- do not use salmon

2 quarts cold water

1/4 cup tarragon vinegar

2 medium celery stalks with leaves cut into 2 inch pieces

2 medium carrots -- cut into 2 inch pieces

2 medium leeks; white part only -- split

1/2 medium lettuce

10 pieces white peppercorns

5 pieces dill sprigs -- fresh

3 pieces parsley sprigs

2 pieces bay leaves

1 teaspoon dried thyme

1 teaspoon salt
 

Preparation / Directions:


Combine all ingredients in 4- to 5-quart saucepan and bring to boil. Reduce heat and simmer uncovered 45 minutes. Strain through colander or cheesecloth-lined strainer before using.
