Catfish Parmesan

Ingredients:

6 fillets pan-dressed whole catfish or catfish fillets
2 cups dry breadcrumbs
3/4 cup grated parmesan cheese
1/4 cup parsley -- chopped
1 teaspoon paprika
1/2 teaspoon oregano
1/4 teaspoon basil
2 teaspoons salt or to taste
1/2 teaspoon pepper
3/4 cup margarine or cooking oil
1 medium lemon wedges
 

Preparation / Directions:

Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip Catfish in melted butter or oil and roll in crumb mixture. Arrange in well-greased 14 by 9 by 2" baking dish. Bake in preheated 375F oven for 25 minutes or until fish flakes easily. Cooking time will be less if using fillets. Garnish with lemon wedges.
