Chocolate Chestnut Mousse

2 pounds chestnuts
12 tablespoons sugar -- or to taste
4 tablespoons cocoa
4 tablespoons amaretto
16 ounces heavy cream

Preparation / Directions:

Score and boil chestnuts for 15 to 20 minutes. Shell nuts. Add sugar, cocoa and amaretto, and process in a food processor until well combined. Beat heavy cream until stiff. Fold into chestnut mix. Divide among dessert glasses and serve
