Enchilada Casserole

2 pounds ground beef
1 medium onion -- chopped
1 can prepared enchilada sauce
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 medium jalapeno pepper
12 ounces cheddar cheese
1 package soft tortillas

Preparation / Directions:

Brown ground beef and onion. Drain. Mix together enchilada sauce and soups. Chop jalapeno pepper, and add to above mixture. Cut tortillas into 1/4's, and layer with ground beef, sauce, and meat. Top with cheese. Bake in 350 degree oven for 35 to 40 minute
