Zucchini Scramble

Ingredients:

2 Small Zucchini -- about 1lb,sliced
1 Medium Onion -- chopped
2 tablespoons Butter Or Margarine
1 teaspoon Salt And Pepper -- to taste
6 large Eggs -- beaten (6 -8)
1/2 Cup Shredded Cheddar Cheese
1 Medium Tomato Wedges -- optional
 

Preparation / Directions:

In a skillet, saute zucchini and onion in butter until tender. Season=20 with salt and pepper. Add the eggs; cook and stir until set. Sprinkle = with=20 cheese. Remove from heat; cover until cheese melts. Serve with tomato=20 wedges , if desired.
