Spicy Cajun-Style Scrambled Eggs In A Hot Half Shell

Ingredients:


48 Large eggs

2 tablespoons thyme

2 tablespoons oregano

1 tablespoons salt

1 tablespoons black pepper

1 tablespoons cayenne pepper

1 1/2 Cups half and half

12 medium Avocados (about 6 pounds)

2 tablespoons Melted butter (as needed)

24 Slices crisply cooked bacon

1 medium Roasted sweet red pepper (for garnish)

1 bunch Thinly sliced green onion (for garnish)
 

Preparation / Directions:


Whisk eggs with next 6 ingredients together; reserve. Brush 1 peeled avocado half with butter. Bake at 500° F until hot and lightly browned, about 5 minutes. Scramble 1/2 cup egg mixture in butter. Mound eggs in avocado half. Garnish with bacon, roasted pepper and green onion.
