Ingredients:

3 package eggbeaters (equal to 6 eggs)
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
4 large egg whites
14 1/2 ounces stew tomatoes
1/8 teaspoon pepper
 

Preparation / Directions:

Pam Spray 8x8x2 inch baking dish , set aside. Beat eggbeaters onion Powder ,sallt, and pepper about 4 minutes or till lemon color, set aside. Beat whites till form soft peaks , fold in the eggbeater mix. Spread mix into the bake dish bake 350 oven 22 to 25 mins. or till a knife inserted in middle comes out clean. Meanwhile , for sauce combine tomatoes, and 2nd 1/8 tsp pepper , bringto a boil, reduce heat and let simmer about 5 mins , stir and let simmer till mix has reduced to about 1/2. To serve cut omelet into 1/4`s and top with sauce.
