Peasant Omelet - Food In A Flash

4 tablespoons olive oil
2 medium bell peppers
1 medium potato
1 medium onion
3 medium tomatoes
1/4 cup black olives
1/8 teaspoon salt and black pepper
2 tablespoons chopped fresh chives
6 large eggs
1/2 cup grated parmesan cheese

Preparation / Directions:

Heat oil in frying pan. Add peppers and onion. Cook, without browning, for about 2-3 minutes. Add potato, tomatoes, black olives, salt and pepper. Cook 3-4 minutes stir occasionally. Stir in chives. Turn heat to medium and add eggs. Stir gently as they begin to cook. Let them set until firm. Sprinkle on cheese. Add more salt and pepper to taste. Serve, cut into wedges.
