1 recipe egg mixture -- (as in basic french omelet), * see note
3 medium boiled potatoes
2 tablespoons butter

Preparation / Directions:

* Note: The recipe for "Basic French Omelet" is included in this database. Dice potatoes. In heavy skillet, heat butter. Add potatoes and cook for 15 minutes, or until potatoes are golden brown. Add potatoes to egg mixture and make omelet as in "Basic French Omelet." Suggested Wine: A chilled dry white wine: Bordeaux Graves; etc.
